Spinach, Feta and Kale Pie

Makes 2-3 servings

  • 1 leek sliced
  • 1 tsp coconut oil
  • bunch of kale,  finely shredded
  • 100g baby spinach leaves
  • black pepper, generous pinch
  • 40g quality feta cheese
  • 4 eggs (organic)
  • zest of 1 lemon
  • large bunch of parsley, chopped
  • small handful of pine nuts


  1. Preheat oven to 180 C
  2. Sauté the leeks in a large pan until soft
  3. Add shredded kale and cook for 5 mins until soft and wilted
  4. Add spinach leaves and cook until wilted
  5. Season with black pepper
  6. Add the lemon zest and parsley
  7. Spoon the mixture into a 22cm pie dish
  8. Whisk eggs in separate bowl, then pour the eggs over the greens and fold through the mix
  9. Crumble over the feta cheese and sprinkle over the pine nuts
  10. Bake for 40-45 mins or until firm to touch
  11. Remove from oven and rest for 5 mins before serving
